Potato-Mushroom Chowder

Ingredients

  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 2 tablespoons flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cups water
  • 1/2 lb fresh mushrooms, sliced
  • 1 cup chopped celery
  • 2 cups diced potatoes
  • 1/2 cup chopped carrot
  • 1 cup light cream
  • 1/4 cup grated parmesan cheese

Directions

  1. Saute onion in butter; add flour and seasonings.
  2. Slowly add water, stirring.
  3. Bring to a boil, cook 1 minute.
  4. Add remaining ingredients, reduce heat and simmer for 30 minutes.
  5. Add cream and cheese; heat through.
