Grilled Portobello with Tomatos and Mozzarella

Ingredients

  • 4 large portobello mushrooms
  • 2 cloves of minced garlic
  • 3 small tomatos
  • 6 tablespoons of olive oil
  • 8 ounces mozzarella

Directions

  1. Cube tomatos and mozzarella.

  2. De-stem portabello mushrooms.

  3. Drizzle 3 tablespoons of olive oil over mushrooms.

  4. Sprinkle with salt and pepper, to taste.

  5. Grill mushrooms until tender; only a few minutes per side.

  6. Whisk olive oil and garlic in bowl.

  7. Add tomatos and cheese; gently toss.

  8. Remove portabellos from grill.

  9. Spoon tomatos / cheese mixture into mushroom caps.

  10. Serve warm.
