Quick Hollandaise

If doubling recipe, can use a regular blender or food processor if desired.

Ingredients

  • 1/4 cup butter
  • 2 egg yolks
  • 1/8 teaspoon Dijon mustard
  • 1/2 Tablespoon lemon juice
  • 1/4 teaspoon salt
  • small pinch of cayenne pepper or a small dash of Tobasco sauce, if desired.

Directions

  1. Blend all ingredients except butter in a bowl with hand blender.

  2. Melt butter in microwave in a small measuring cup. Add hot butter gradually and blend until thickened and smooth.
