Basic Tomato Sauce

Ingredients

  • 3 1/2 cups canned crushed tomatoes (1 28 oz. can)
  • 3 Tablespoons olive oil
  • 1 cup finely chopped onions
  • 1 1/2 Tablespoons minced garlic
  • 5 Tablespoons tomato paste
  • 1 1/2 teaspoons crushed oregano
  • 1/4 teaspoon cayenne pepper
  • salt and freshly grated pepper to taste
  • 6 Tablespoons finely chopped fresh basil
  • 1/4 cup finely chopped parsley
  • 1 cup beef stock

Directions

  1. Heat oil in a saucepan and add onions and garlic. Cook while stirring, do not brown. Add tomatoes, tomato paste, oregano, cayenne, salt, pepper, basil, and parsley. Stir and bring to a boil. Add the stock and simmer 30 minutes.
