Speedy Salmon with Dijon Glaze

Ingredients

  • 1/4 c olive oil
  • 3 T ls soy sauce
  • 2 T Dijon mustard
  • 1 shallot, minced
  • 4 (6 oz) skinless salmon fillets, 3/4 in thick
  • 1/4 t salt
  • 1/2 t pepper

Directions

  1. Whisk together olive oil, soy sauce, mustard and shallot in small bowl. Reserve half.

  2. Preheat grill to medium. Season fillets with s & p. Put fillets on grill and brush with half glaze. Grill 2 minutes, thien brush with remaining glaze. Grill 2 minutes more.

  3. Drizzle remaining glaze over fillets before serving.
