Breakfast Bars

Ingredients

  • 2 1/2 c old-fashioned rolled oats
  • 1/2 c soy flour
  • 1/2 c dry milk
  • 1/2 c toasted wheat germ
  • 1/2 c sliced almonds or chopped pecans, toasted
  • 1/2 c dried apples, chopped
  • 1/2 c raisins
  • 1/2 t salt
  • 1 c honey
  • 1/2 c natural unsalted peanut butter
  • 1 T olive oil

Directions

  1. eheat oven to 325. Oil a 9×13 baking pan.

  2. In large bowl, combine oats, flour, dry milk, wheat germ, almonds, apples, raisins, and salt. Stir well and set aside.

  3. IN a small saucepan, stir together honey, peanut butter and olive oil over medium-low heat until well blended. Don’t let it boil. Stir in vanilla.

  4. Add warm honey mixture to the dr ingredients and stir quickly until well combined. Mixture should be sticky but not wet.

  5. Pat mixture firmly and evenly into the prepared pan. Press to remove air pockets. Bake just until edges brown (~25 minutes.) COol in pan on wire rack for 10 minuts, then cut into 24 bars. When just cool enough to handle, remove from pan and cool completely on rack. Store in refrigerator.
