Mom’s Roast Turkey

Ingredients

  • 1 Turkey (~15 lbs)
  • Juice of a lemon
  • Salt and Pepper
  • Olive Oil or melted butter (I use half and half)
  • 1/2 onion, peeled and quartered
  • tops and bottoms of a bunch of celery
  • 2 carrots
  • Parsley
  • Sprigs of fresh rosemary, thyme, etc

Directions

  1. Bring turkey to room temperature before cooking. Note if frozen defrost 5 hrs for every pound. Remove turkey innards.

  2. Preheat oven to 400 degrees F

  3. Wash out turkey with water, pat dry, rub inside cavity with juice of half a lemon and run salt inside.

  4. For flavor, put half the onion, bunch of parsley, carrots, celery parts, and sspices. Put in crumpled aluminum foil to hold itin if needed. Tie legs together, held close to body, and tie string to keep wings in.

  5. Rub oil over outside of turkey. Sprinkle salt and pepper to taste.

  6. Place turkey BREAST DOWN on bottom of rack in roasting pan.

  7. Place turkey in oven ~15 minutes per pound. For 15 lb:

  8. 400F 30 minutes

  9. 350F 2 hours

  10. 5F 1-1.5 hrs.

  11. Meat should be at temp of 175 for thigh. Once turkey removed from oven, rest for 15-20 minutes before carving.
