Pumpkin Cheesecake

Ingredients

  • 2 8-in graham cracker pie crusts
  • 3 (8-ounce) packages cream cheese, at room temperature
  • 1 (15-ounce) can pumpkin pie mix
  • 3 eggs plus 1 egg yolk
  • 1/4 cup sour cream
  • 2 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees F.

  3. With electic mixer, beat cream cheese until smooth

  4. Add pumpkin pie mix, eggs, egg yolk and sour cream

  5. Add flour and vanilla

  6. Beat until well combined

  7. Pour into pie crusts, spreading out evenly

  8. Bake in oven for 1 hour

  9. When cooked through, turn the oven off, crack open the oven door and allow the cheesecakes to cool overnight in the oven.

  10. Cover with plastic wrap and refrigerate until ready to serve
