Zucchini Bread

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon nutmeg
  • 3 eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 cup vegetable oil
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 3 teaspoons vanilla extract
  • 2 to 3 cups grated zucchini
  • 1 banana, chopped

Directions

  1. Preheat oven to 325 degrees F

  2. Grease and flour two 8 × 4 inch pans

  3. Sift flour, salt, baking powder, baking soda, cinnamon and nutmeg together in a bowl

  4. Beat eggs, applesauce, oil, sugar and vanilla together in a large bowl

  5. Add sifted ingredients to the creamed mixture, and beat well

  6. Stir in zucchini and banana until well combined

  7. Pour batter into prepared pans

  8. Bake for 50 to 60 minutes, or until tester inserted in the center comes out clean

  9. Cool in pan on rack for 20 minutes

  10. Remove bread from pan, and cool completely
