Mom’s Peach Cobbler

Buy the peaches a few days early to allow them to ripen.

Ingredients

  • 3/4 cup plus 2 Tbsp. Sugar
  • 1 3-ounce package peach jello (or part of a larger box)
  • 2 Tbsp. Flour
  • 5 cups fresh peaches, peeled and sliced
  • 2 cups Bisquick mix (I use the lowfat bisquick)
  • 1/4 cup butter
  • 2 Tbsp. Grated lemon peel
  • 1/2 cup half and half (I use non fat half and half)

Directions

  1. In a 12 × 7 baking dish, combine ¾ cup sugar, jello, and flour; mix well. Toss peaches with the mixture, spread evenly in baking dish. Bake at 425 for 15 minutes. Stir several times. In a large bowl, combine Bisquick, 2 Tablespoons sugar, butter and lemon peel. With a fork, stir in half and half. Remove pan from oven. Drop small spoonfuls of the mixture onto the hot fruit, bake at 425 for 15 – 20 minutes or until the top is golden brown and cooked in the center. Top with vanilla ice cream or freshly whipped cream (I use real whipped cream).
