Leek Scape Pesto

Ingredients

  • 1 1/2 cups leek scapes cut into 1 inch pieces
  • 1 1/2 cups chopped parsley
  • 1/4 cup olive oil
  • 1/4 cup sliced almonds
  • 2 tablespoons water
  • 1 garlic clove pressed
  • salt to taste

Directions

  1. In a food processor, combine all ingredients until smooth.
