Fresh Apple Cake

Ingredients

  • Batter:
  • 1/2 c oil
  • 2 c sugar
  • 3 eggs
  • 2 tsp vanilla
  • 3 c flour, self-rising
  • 3 apples, chopped
  • 1 c nuts
  • Filling:
  • 1 stick butter
  • 1 c sugar, brown
  • 1/4 c milk

Directions

  1. Batter:

  2. Cream oil and sugar together.

  3. Add eggs one at a time.

  4. Add vanilla.

  5. Add flour in portions gradually.

  6. Batter will be stiff!

  7. Fold in apples and nuts.

  8. Season with cinnamon and nutmeg (optional).

  9. Bake at 350 for 1 hour.

  10. Filling:

  11. Bring mixture to boil then cook for 2 1/2 minutes.

  12. Pour over cake while warm.
