Smoked Gouda and Grilled Onion Salad

Ingredients

  • 6 cups romaine lettuce, torn
  • 2 cups onion, sliced
  • 4 servings whole grain crackers
  • 4 ounce smoked Gouda, diced
  • 4 T olive oil
  • 4 T balsamic vinegar
  • 4 t lemon juice
  • dash black pepper, cracked

Directions

  1. On the stove top over medium heat, saute the sliced onion in the olive oil until translucent. Set aside.

  2. Toss the romaine with the vinegar and lemon juice.

  3. Top the lettuce with the sauteed onions, then the Gouda, and dust with the pepper.

  4. Serve with crackers.
