Blackberry Cobbler

Ingredients

  • 1 cup flour
  • 2 t. baking powder
  • 1/2 t. salt
  • 1 cup milk
  • 1/2 cup butter or margarine, melted
  • 2 1/2 cups fresh or frozen blackberries (if frozen, thaw and drain)
  • 1 cup sugar

Directions

  1. Heat oven to 375 degrees.

  2. Mix flour, baking powder, salt and milk in an ungreased 8-inch square pan. Stir in butter until blended.

  3. Mix blackberries and sugar; spoon over batter (you can mix blackberries and sugar and let stand about 20 minutes or until fruit syrup forms, before spooning over batter). Bake 45-55 minutes or until dough rises and is golden.

  4. Serve warm with cream, whipped cream or ice cream if desired.
