Raw Chili

Ingredients

  • 4 tomatoes
  • 2 avocados
  • 1/2 cup sun-dried tomatoes
  • 1 T fresh ginger
  • 1/2 teaspoon salt
  • 2 T chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon cayenne
  • 2 carrots
  • 2 celery stalks
  • 1 red pepper
  • 1/2 cup chopped leeks
  • 1/4 cup olive oil
  • 1 teaspoon salt

Directions

  1. Blend tomatoes, avocado and sun-dried tomatoes in food processor with ginger, salt, chili powder, cumin and cayenne.

  2. Chop all veggies into small cubes and marinate in olive oil and 1/2 teaspoon salt.

  3. Place in the dehydrator at 145o for 1 hour.

  4. Mix all ingredients together.

  5. Optional: Place entire bowl in dehydrator at 145o for 1 hour and serve warm.
