Green Beans with Garlic Dressing

Ingredients

  • 2 pounds green beans, ends trimmed
  • 1/2 cup sliced almonds
  • 1 T chopped fresh thyme
  • dressing:
  • 2 T olive oil
  • 1 T lemon juice
  • 1/2 teaspoon lemon zest
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. To prepare the beans, blanch beans in a large pot of boiling water for 4 minutes or until crisp-tender. Drain well.

  2. Combine all ingredients for dressing in a small bowl, and stir with a wire whisk.

  3. Place beans, almonds, and thyme in a large bowl. Add dressing and toss well to coat.
