Black Olive Hummus (Bean Free)

Ingredients

  • 1/3 C sunflower seeds, dried
  • 2 C zucchini, chopped
  • 2 cloves garlic
  • juice of 1 lemon (about 2 T)
  • 1/4 C plus 1 T olive oil
  • 1/2 C tahini
  • 1/4 C kalamata black olives, pitted and chopped
  • pinch paprika

Directions

  1. Process sunflower seeds into a powder. Set aside.

  2. Process zucchini, garlic, lemon juice, 1/4 C oil, and tahini until smooth.

  3. Slowly add sunflower powder back into food processor. Process until mixture reaches a smooth hummus consistency.

  4. Pour mixture into a bowl and stir in chopped black olives.

  5. Sprinkle with paprika and drizzle with remaining oil.

  6. Keeps for 3 days in fridge.
