Jalapeno Chicken & Pasta

Ingredients

  • 4 boneless chicken breast halves, cut in 1" cubes
  • 2 medium red peppers, cut in 1" cubes
  • 2 medium yellow peppers, cut in 1" cubes
  • 10 ounces shittake mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, seeded and chopped
  • 3 tablespoons white wine
  • 1/2 can low sodium chicken broth, undiluted
  • 6 ounces rigatoni
  • 1 tablespoon olive oil
  • 1/4 cut diagonal green onions
  • 1/4 cup fresh Parmesan
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup chopped cilantro

Directions

  1. Saute chicken, pepper cubes, mushrooms, garlic and jalapeno pepper. Saute 4 minutes or until chicken is lightly browned. Add wine and saute 2 minutes. Remove from heat, set aside. Cook rigatoni. Drain well. Place in large bowl. Add oil and toss well. Add chicken mixture, stir and add onions, parmesan, salt, pepper and cilantro
