Basic Meatloaf

Serves 6 people

Ingredients

  • 6 ounces lean ground beef
  • 12 ounces ground chicken
  • 1/2 cup diced onion
  • 1 tablespoon worcestershire sauce
  • 2 teaspoons dehydrated onion flakes
  • 1 each beef bouillon cube -- I use herb ox low sodium
  • 1/3 cup water -- hot -divided
  • 1 tablespoon tomato paste
  • 1/2 teaspoon salt -- *1/4 ttp if using salty bouillon
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper

Directions

  1. Mix tomato paste in 3T water. Add 1tsp worcestershire sauce and 1tsp dried onion. Set aside.

  2. Mix remaining seasonings, bouillion and dehydrated onions in remaining water and set aside.

  3. Preheat oven to 350f. Spray a 9" square cake pan with cooking spray to aid in clean-up.

  4. Gently mix chicken(or turkey) and ground beef until well blended. Add the seasoning, bouillion and water mixture and blend well.Pat into a loaf in the prepared pan. Stir tomato paste mixture and spread on top of loaf.

  5. Bake uncovered for 30-40 minutes or until meat is cooked through.Let rest 10 minutes before slicing.
