Dorian’s Seven-Hour Lamb

The carrot does something magical!

Ingredients

  • leg of lamb
  • olive oil
  • rosemary
  • salt and fresh-ground pepper
  • garlic, sliced
  • Large brown paper bag
  • 1 carrot

Directions

  1. Get an early start.

  2. Preheat oven to 175 degrees. Rub the lamb with olive oil, rosemary, salt and pepper.

  3. Cut slits in the meat and insert garlic slivers (use LOTS of garlic).

  4. Put the lamb in the paper bag, close the tightly, and place the carrot on top of the bag. (REALLY!)

  5. Cook the lamb in a large open casserole, preferably cast iron, for 7 hours.

  6. Let the lamb cool in the bag for 1/2 hour.

  7. Pour the sauce from the bag over the lamb. The meat should gall away from the bone.
