Poppy Seed Thumbprints

Ingredients

  • 1 cup softened butter
  • 1/2 cup, firmly packed, brown sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 1/2 cups unsifted all purpose flour
  • 2 tablespoons poppy seeds
  • 1 tablespoon water (if needed)
  • 2/3 cup of your favorite jam or jelly

Directions

  1. Preheat oven to 350 degrees.

  2. In large bowl beat butter, egg yolks, ad vanilla until well blended.

  3. Stir on flour and poppy seeds.

  4. Mix dough until it sticks together; if it doesn’t add a little water.

  5. Roll 1 teaspoon of dough into a ball and place on an ungreased cookie sheet.

  6. Bake for 2 minutes.

  7. Remove from oven.

  8. Press your thumb into the top of each cookie to make an indentation.

  9. Put back in the oven for 12 to 15 minutes, or until the cookies are golden.

  10. Remove from cookie sheets and allow to cool.

  11. Fill indentations with jam.

  12. Drizzle with melted chocolate if desired.
