Sweet Potato Crunch

Ingredients

  • 3 cups sweet potatoes, mashed
  • 1 tsp vanilla
  • 2 eggs
  • 1/3 c. margarine/butter
  • Optional seasonings: nutmeg, cinnamon, ginger
  • Topping:
  • 1/2 cup brown sugar
  • 1 cup coconut
  • 1/2 cup chopped pecans
  • 13 cup flour
  • 1/2 cup margarine/butter

Directions

  1. eheat oven to 350 degrees. Boil sweet potatoes whole and peel. Mash and add butter, eggs, and seasonings. Transfer to a greased baking dish (1.5 qt or 9×13). Mix topping ingredients together and spread over mashed sweet potatoes. Bake covered for 20 minutes and uncovered for 15 minutes.
