Herbed Walnut Artichoke Lettuce Wraps

Ingredients

  • 5 large outer romaine leaves
  • 1/2 cup artichoke hearts
  • 1/4 cup onion, diced
  • 1/4 cup red bell pepper, minced
  • 1/2 cup cooked brown rice or wheatberries
  • 1/2 cup cottage cheese
  • 2 T walnuts, chopped
  • Dash cracked black pepper,
  • 1/2 t garlic, minced
  • 1 t Italian herbs

Directions

  1. Fold the artichoke hearts, onion, red pepper, brown rice, walnuts, pepper, garlic and herbs into the cottage cheese.

  2. Fill the romaine leaves with the cottage cheese mixture.
