Garlicky Barley Vegetable Chicken Soup

Serves 6 people

Ingredients

  • 1 1/2 cup onions, chopped
  • 1 1/2 cup zucchini, chopped
  • 1 1/2 cup carrots, chopped
  • 1 1/2 cup cauliflower, chopped
  • 3 cloves garlic
  • 2 28 oz cans diced Italian tomatoes
  • 12 c vegetable or chicken broth
  • 3 cups barley, cooked
  • 18 oz. chicken, cooked
  • 6 T olive oil
  • 3 t Italian herbs

Directions

  1. Saute the garlic and onion in the oil until the onion is translucent.

  2. Add the chopped carrots, zucchini and cauliflower and lightly saute.

  3. Add broth and tomatoes and bring to a boil.

  4. Simmer 5-8 minutes.

  5. Stir in the barley, chicken and herbs and heat through.
