Vegetarian Chili

One of Nick’s favorites

Prep time: 15 minutes
Cook time: 120 minutes
Serves 6 people

Ingredients

  • 1 onion diced
  • 5 cloves garlic minced
  • olive oil
  • 1 can black beans
  • 1 can pinto beans
  • 1 can kidney beans
  • 1 28 oz can diced tomatoes
  • 1 14.5 oz can petite diced tomatoes
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 2 jalapeno peppers diced
  • 1 7 oz can green chilies
  • 1 cup frozen corn
  • 1 12 oz can of light beer
  • salt to taste
  • chili powder to taste
  • smoked paprika to taste
  • cayenne pepper to taste

Directions

  1. Saute onions and garlic in soup pan until the onions are translucent.

  2. Add all other ingredients and bring to a boil, stirring occasionally.

  3. Bring to a simmer (no cover).

  4. The longer you cook it the better it is!

  5. Add shredded cheese or sour cream on top.
