Festive vanilla fudge

(from Cherster’s recipe box)

Ingredients

  • 1 bag white vanilla baking chips (2cups)
  • 1/4cup whipping cream
  • 1 tab. Honey
  • 3/4 cup chopped salted mixed nuts
  • 3/4 cup red & green candy coated chocolate coated candies

Directions

  1. Line bottom and sides of 8 inch square pan with foil, leaving foil over hanging 2 opposite sides; spray foil with cooking spray .

  2. In large microwaveable bowl, mix baking chips, cream and honey. Microwave. On high about 1 min. 30 sec., stirring very 30 seconds, until chips are melted and mixture is smooth. Stir in nuts. Cool about 30 mins. Or until just slightly warm. Quickly stir in 1/2 cup of candies, spread evenly in pan. Sprinkle remaining 1/4 cup candies over top. Press lightly into top. Refrigerate about 30 mins. Or unil completely set.

  3. Remove fudge from pan onto cutting board by lifting with foil. With large sharp knife, cut into 4 rectangles and each rectangle into 8 pieces.
