Fruit Salad With Fresh Coconut and Mint

Fresh mint gives a cool hit to traditional fruit salad, and freshly grated coconut adds an exotic touch. If you like, use shredded coconut instead of fresh.

Ingredients

  • 1/2 medium watermelon
  • 1 cantaloupe, cut in 1/2, seeds removed
  • 1 small pineapple, peeled and cubed
  • 2 bunches seedless green grapes, removed from stem
  • Juice of 2 lemons
  • 1/2 cup dark rum
  • About 1/3 cup freshly grated coconut
  • 2 tbsp. chopped fresh mint

Directions

  1. Using a melon baller, scoops balls from watermelon and cantaloupe. Alternatively, dice the melons. Place in a large bowl. Add pineapple, grapes, lemon juice and rum. Toss to combine. Let stand in fridge, for at least 30 minutes. Before serving, toss salad with freshly grated coconut and fresh mint.
