Roasted New Potatoes

Ingredients

  • 2 lbs. new potatoes, halved lengthwise
  • 6 slices bacon
  • 3 T. Italian Dressing
  • 1/3 cup mayonnaise
  • 1 T. lemon juice
  • 1 clove garlic, mincec
  • 2 T. shredded Parmesan cheese
  • 2 t. fresh parsley, chopped

Directions

  1. Heat oven to 400 degrees.

  2. Combine potatoes, bacon and dressing; spread onto bottom of 15×10×1-inch pan. Bake 45 minutes or until potatoes are crisp around the edges, stirring after 25 minutes.

  3. Meanwhile, mix mayo, lemon juice and garlic.

  4. Spoon potatoes onto platter; top with mayo mixture, cheese and parsley.
