Southwestern Chicken (aka. Chicken Stuff)

Ingredients

  • 2- cans yellow hominy, drained, rinsed
  • 2- cans black beans, drained, rinsed
  • 16 oz jar chunky salsa, divided
  • 6 boneless, skinless chicken breast halves (or equivalent b/s chicken thighs or mix)
  • 1 C low-fat shredded cheddar cheese
  • low-fat sourcream

Directions

  1. Combine hominy, black beans and 1/2 C salsa in crockpot.

  2. Top with chicken. Pour remaining salsa over chicken.

  3. Cover; cook on high 3-4 hours or low 6-7 hours.

  4. Serve over rice. Top with cheese and sour cream.

  5. If there are any leftovers, it makes great burritos.
