Mango Bean Salad

Ingredients

  • 1/2 cup pearl barley cooked (cook in 1 1/2 cup water 40-45 minutes)
  • 1 cup long grained rice, cooked
  • 1 cup black or pinto beans
  • 1 cup red kidney beans
  • 1 cup corn niblets
  • 1/2 cup green onion, chopped
  • 1 red pepper, diced
  • 1 mango, chopped
  • 1/4 cup cilantro
  • Dressing:
  • 1/4 cup red wine vinegar or white wine vinegar
  • 1/2 cup olive oil
  • 1 garlic clove, minced
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • optional: cayenne or red pepper flakes

Directions

  1. Whisk dressing

  2. Pour over mixed salad
