Black Bean & Cucumber Salad/Salsa

Ingredients

  • 2 cups corn (frozen, fresh or canned)
  • 2 cups tomatoes, seeded and chopped
  • 2 cups cucumbers, seeded and chopped
  • 3/4 cup onion, chopped (preferably purple)
  • 1/4 cup fresh cilantro, chopped
  • 1 15 oz can black beans, drained and rinsed
  • 1/2 cup cider vinegar
  • 3 Tbsp olive oil
  • 2 tsp sugar
  • 1/2 tsp salt

Directions

  1. Mix all ingredients together. Serve as a salad or as a salsa with tortilla chips.
