Pennsylvania Dutch Potato Salad

Ingredients

  • 8 potatoes, cooked, peeled, sliced
  • 2 stalks celery, chopped
  • 3 hard boiled eggs, chopped
  • 6 slices of bacon, cooked & crumbled
  • 1 Tbsp parsley
  • Sauce:
  • 2 eggs well beaten
  • 1 cup sugar
  • 1/2 cup white vinegar
  • 1/2 cup cold water
  • 1/4 tsp dried mustard
  • 1/2 tsp salt
  • 1/4 tsp pepper

Directions

  1. Boil potatoes for 20-25 mins, cool, peel, and slice. Beat eggs, add sugar, spices and vinegar and water. Pour egg mixture into hot bacon grease and cook. Stirring until thickened – about 10 mins. Pour over potatoes mixture, add bacon. (Start with adding only 1/2 sauce and continue adding until you are good with the mix.) Serve hot or cold.
