Tortellini & Fresh Basil

Ingredients

  • 1 lb Roma tomatoes, chopped
  • 3 cloves garlic, minced
  • 1/2 cup fresh basil, chopped
  • 1/2 cup feta cheese
  • 2 pkg tortellini, boiled per pkg
  • 1/4 cup extra virgin olive oil
  • 3 Tbsp balsamic vinegar
  • salt & pepper to taste

Directions

  1. Boil tortellini and drain. Add to large bowl and add remaining ingredients. Refrigerate for about an hour before serving.
