Spicy stir-fried green beans

(from cavaliermom’s recipe box)

Ingredients

  • 3 Tbsp vegetable oil
  • 2 tsp minced garlic
  • Dried red pepper flakes
  • Big bag of fresh green beans
  • 2 Tbsp soy sauce
  • 1 tsp sugar

Directions

  1. Before you start, be sure to turn on your stovetop ventilation fan. The fumes from frying red pepper flakes will choke you out of the kitchen if you do not!

  2. Remove ends from green beans, and cut them into inch-long pieces.

  3. Mix soy sauce and sugar in a small bowl and set aside.

  4. Heat the oil on high in a stir fry pan, when quite hot add the garlic and red pepper flakes to taste. Fry for a minute or so, until garlic gets bit brown, then quickly add your green beans.

  5. Stir-fry green beans for several minutes on high, stirring frequently. Cook until they are the texture and color you like.

  6. When beans are to your liking, pour in soy sauce-sugar mixture. Stir and cook for a minute or so while excess liquid evaporates.

  7. Remove beans from heat. You can cover the pan and let sit for several minutes before serving.
