Pecan Slices

Great Christmas cookies…you will want to double this recipe!! Even doubled, these usually disappear by Christmas Eve!

Ingredients

  • 2 cups sugar
  • 2 egg yolks
  • 2 egg whites
  • 2 cups butter
  • 4 cups flour
  • cinnamon as needed
  • pecan pieces as needed
  • extra sugar, as needed

Directions

  1. Cream butter and sugar well, add egg yolk and flour.

  2. Spread on two 9 inch square pans, brush with slightly beaten egg whites.

  3. Sprinkle with pecans generously, very lightly press pecans down into dough, very lightly.

  4. Sprinkle generously with sugar and cinnamon.

  5. Bake until light golden brown, 10-15 minutes at 350 degrees. Tip: I use glass clean Pyrex dishes so I can see how brown the crust/cookie is…will take longer than listed, at least on my oven it does.

  6. Cut while still hot…then cut again when cool.
