Lima Bean and Kielbasa Soup (Crock Pot)

Ingredients

  • 1 (16 ounce) package dried lima beans , sorted and rinsed
  • 1 lb kielbasa , cut into 1/4 inch slices
  • 2 medium carrots , cut into 1/4 inch slices (about 1 cup)
  • 2 stalks celery , chopped (about 1 cup)
  • 1 large onion , finely chopped
  • 2 garlic cloves , finely chopped
  • 6 cups water (I use 3 cups water, 3 cups broth, any kind works)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (14 1/2 ounce) can diced tomatoes , undrained

Directions

  1. Mix all ingredients except tomatoes in a 5 to 6 quart slow cooker.

  2. Cover and cook on high for 10 to 12 hours or until beans are tender.

  3. Stir in tomatoes.

  4. Cover and cook on high for about 15 minutes or until hot.
