chickpea vegan “tuna” salad

Ingredients

  • 1 cup chickpeas, cooked and mashed
  • 1/2 carrot, grated
  • 1/2 celery, sliced
  • 1/2 onion, minced
  • 2 Tbsp vegan mayonnaise
  • 2 tsp mustard
  • 1/2 lemon, juice
  • salt
  • pepper
  • nori seaweed (optional)

Directions

  1. just mix everything and serve on bread. the nori gives it a ‘fishy’ taste, i usually just do without (i never liked fish anyway).
