Red Wine Rice With Grapes

Serves 4 people

Ingredients

  • 1 3/4 cups dry red wine
  • 1 bay leaf (fresh or dried)
  • 1 tablespoon extra-virgin olive oil
  • 1 cup white rice
  • 1 cup halved red seedless grapes
  • fresh flat-leaf parsley , chopped (a handful)

Directions

  1. Bring wine to a boil in a saucepan with bay leaf and oil.

  2. Stir in rice; cover and decrease heat to a simmer.

  3. Cook the rice for 15 minutes, then stir in the grapes and parsley.

  4. Turn off the heat, cover, and let stand for 5 minutes.

  5. Discard bay leaf before serving.
