Cream of Tomato Soup

Ingredients

  • 1/2 T. Olive Oil
  • 2 T Green Onions
  • 1 t Green Onions
  • 1 can Chicken Broth
  • 1 1/4 c Water
  • 1 large Can Crushed Tomatoes (about 1 quart)
  • 1 1/2 t Basil
  • Pepper
  • 3/4 c Heavy Cream

Directions

  1. Saute garlic and onions in olive oil.

  2. Let cream sit out on stove or warm 45 sec. – 1 min. in the microwave before adding.

  3. Add all ingredients except cream.

  4. Bring to a boil.

  5. Add cream and simmer for 5 min.

  6. NOTE: I add extra onions and sometimes add cheese tortillinis.
