Roasted Spicy Asian Sweet Potatoes

Ingredients

  • 6 large sweet potatoes , peeled and cut into 1-inch chunks
  • 1 cup unsalted butter , melted
  • 2/3 cup firmly packed light brown sugar
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Chinese five spice powder
  • 1/2 teaspoon ground ginger

Directions

  1. Coat a 13 × 9 inch baking dish with nonstick cooking spray.

  2. Add potatoes to the prepared dish.

  3. In a bowl, stir together the remaining ingredients until well blended; pour the butter mixture over the potatoes and turn to coat evenly.

  4. *At this point, you can cover and refrigerate for up to 2 days, bring to room temperature before continuing.

  5. Preheat oven to 375°; bake until tender when pierced with a knife, 45-55 minutes.

  6. Remove from the oven and serve hot or at room temperature.
