Roberts Family Baked Nachos

Many different toppings can be used depending on your preference. Some suggestions are shredded lettuce, diced tomatoes, green onion, etc. You can purchase prepared quacamole or make your favorite quac recipe.

Ingredients

  • 1 bag Tortilla chips
  • 1 can Refried beans
  • 1 can Enchilada sauce
  • 1 Onion (finely chopped)
  • 1 lb Ground beef
  • 1 Packet taco seasoning
  • 2 cups Shredded cheese
  • 1 jar Jalapenos (pickled & sliced)
  • 1 can Black olives (sliced)
  • Quacamole (2 dollops per plate)
  • Sour cream (1 dollop per plate)

Directions

  1. eheat oven to 350.

  2. Brown the ground beef with the chopped onion and taco seasoning. Drain excess grease, if needed. Cook refried beans in a saucepan and add water to make a smooth sauce-like consistency.

  3. Spread chips out on an oven safe plate. Use a rubber spatula to drizzle refried beans over the chips. Use a church key to open the can of enchilada sauce. Drizzle over the chips. The key is to have enough beans and sauce to add great flavor but too much will produce soggy chips.

  4. Cover with shredded cheese, top with olives and jalapenos. Bake until cheese is melted and chips around the edge of plate are starting to look golden brown.

  5. Carefully remove from oven and place on another plate for easy handling. Top with taco meat, sour cream and quacomole and dig in!
