Enchilada Lasagna

Ingredients

  • 1 cup salsa
  • 1 1/2 tsp. ground cumin
  • 1-14 oz. can no-salt diced tomatoes
  • 1-8oz. can tomato sauce
  • 1 package tortillas
  • 1 cup corn
  • 1-15 oz. can black beans
  • 2 cups grated cheese
  • 1/2 sliced green onion
  • 1 1/2 lbs. chicken
  • 1 package taco seasoning
  • sour cream

Directions

  1. Preheat oven to 450 degrees. Prepare ground beef with taco seasoning according to package directions, set aside. Combine first four ingredients in a small bowl and then spread 2/3 cup into the bottom of a 9″×13″ baking dish sprayed with Pam. Cut the tortilla and cover to the edges of the dish as closely as possible. Top tortilla with 1/2 of the corn, bean and meat mixture. Sprinkle with 1/2 c. cheese and top with 2/3 cup sauce. Repeat layers. Cover. Bake at 450 degree for 30 minutes. Remove and rest of 10 minutes.
