Crock Pot Black Beans and Rice Soup

Ingredients

  • 1 medium onion , chopped
  • 3 carrots , thinly sliced
  • 2 stalks celery , thinly sliced
  • 4 garlic cloves , minced
  • 1/2 teaspoon ground cumin
  • 1 1/2 teaspoons dried basil
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon Tabasco sauce
  • 2 (16 ounce) cans black beans , drained and rinsed
  • 1 (14 1/2 ounce) can crushed tomatoes
  • 2 (14 1/2 ounce) cans broth
  • 1 1/2 cups cooked brown rice

Directions

  1. Combine all ingredients except rice in crockpot.

  2. Cover and cook on low 8 to 10 hours (high 3 to 4 hours).

  3. Add cooked rice before serving.
