Rustic Turkey With Brie and Apples Panini

Ingredients

  • 2 tablespoons walnut oil
  • 2 teaspoons chopped fresh thyme
  • 4 slices whole wheat country bread , 1/2 inch thick slices
  • 2 ounces thinly sliced brie cheese
  • 2 ounces thinly sliced smoked turkey
  • 6 thin slices granny smith apples , unpeeled
  • 1 small bunch watercress , tough stems removed
  • 1/2 teaspoon fresh lemon juice
  • fresh ground black pepper

Directions

  1. Preheat the sandwich grill.

  2. In a small bowl, stir together the oil and chopped thyme.

  3. Place the bread slices on a work surface and brush 1 side of each with 1 tablespoon thyme oil, dividing evenly.

  4. Turn 2 of the slices oiled side down and layer 1/4 of the brie, half of the turkey, 3 slices of apple, and a few sprigs of watercress on the unoiled side of each.

  5. Drizzle with the lemon juice and the remaining 1 tablespoon thyme oil, dividing evenly, and sprinkle with pepper to taste.

  6. Divide the remaining brie on top.

  7. Place the remaining 2 bread slices on top, oiled sides up, and press to pack gently.

  8. Place the panini in the grill, close the top plate, and cook until the bread is golden and toasted, the apple and turkey are heated through, and the cheese is melted, 3-5 minutes.

  9. Cut each sandwich in half and serve right away.

  10. *Can substitute pear for the apple.
