Salmon Burgers

Ingredients

  • Tartar Sauce:
  • 1/2 cup mayonnaise
  • 3 tablespoons fresh lemon juice , divided
  • 2 tablespoons capers , drained
  • 1 tablespoon sweet pickle relish
  • salt
  • black pepper
  • Salmon Burgers:
  • 1 cup panko , bread crumbs
  • 1/2 cup chopped celery
  • 1/4 cup chopped onion
  • 1/4 cup chopped chives
  • 1 egg white
  • 1 tablespoon sriracha sauce
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 lb skinless salmon , diced
  • 4 hamburger buns , toasted
  • shredded iceburg lettuce
  • tomato , slices

Directions

  1. Preheat grill to medium-high; line a baking sheet with parchment paper.

  2. Combine mayonnaise, 2 tablespoons lemon juice, capers, and relish in a small bowl; season with salt and pepper; cover and chill.

  3. Pulse panko, celery, onion, chives, egg white, Sriracha sauce, 1 tablespoon lemon juice, salt, and pepper in a food processor until minced; add salmon; pulse briefly.

  4. Form salmon mixture into 4 patties; transfer to prepared baking sheet.

  5. Coat both sides of burgers with nonstick spray; brush grill grate with oil.

  6. Grill burgers, covered, until cooked through, about 4 minutes per side.

  7. Place lettuce and tomato on buns; top with burgers and tartar sauce.
