Easiest Whole Wheat Bread

Ingredients

  • 7 cups whole wheat flour
  • 2/3 cup vital gluten
  • 2 1/2 tablespoons yeast
  • 5 cups HOT tap water (120-130˚)
  • 2 tablespoons salt
  • 2/3 cup oil
  • 2/3 cup honey or 1/3 cup honey and 1/3 cup molasses
  • 2 1/2 tablespoons bottled lemon juice
  • 4-5 cups more whole wheat flour
  • 3 tablespoons dough enhancer (optional)

Directions

  1. Mix the 7 cups flour, gluten, and yeast with the hot tap water. Mix 1 minute and cover for 10 minutes. Add all at once the salt, oil, honey, and lemon juice. Beat 1 minute. Add the rest of the flour 1 cup at a time. Beat 6-10 minutes with a bread mixer or by hand until dough has a smooth, elastic, texture. Add dough enhancer.

  2. Roll dough into loaves and put into 5-6 greased loaf pans. Preheat oven on warm for 1 minute then turn it off. Put the loaves in the oven and set the timer for 15 minutes or until the dough reaches the top of the pan. Turn oven on 350˚ and bake for 30-35 minutes. If bread is done, loaves will sound hollow when you thump them on the bottom.
