Shepherd’s Pie

Ingredients

  • 2 lbs ground beef
  • 1 large onion, diced
  • 4 large carrots, diced
  • 4 stalks of celery, diced
  • A bunch of scallions, chopped
  • A bunch of kale, chopped
  • 2 c peas
  • 3 T flour
  • Salt and pepper to taste
  • Herbs of your choice
  • milk
  • butter
  • mashed potatoes

Directions

  1. Put half a stick of butter in a pan to melt and add chopped onion, carrots and celery to soften. Then add peas, spinach, herbs such as rosemary, oregano, sage and thyme, plus salt and pepper.

  2. In the same pan, add ground beef to brown, and then mix with the vegetables.

  3. Turn down the heat and add flour, then half a stick of butter to melt, then milk, half a cup at a time, until there’s a nice gravy.

  4. Put in a baking dish and top with mashed potatoes and heat through in the oven.
