Zucchini Sheetcake

Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup oil
  • 1/2 cup cocoa
  • 1 teaspoon salt
  • 1/2 teaspoon soda
  • 1 teaspoon vanilla
  • 2 cups zucchini
  • 2 cups flour
  • Frosting:
  • 6 tablespoons melted butter
  • 3 tablespoons cocoa
  • 4 tablespoons milk
  • 3 cups powdered sugar

Directions

  1. Mix first six ingredients and beat for two minutes. Add zucchini and flour alternately and beat two more minutes. Don’t under beat. Bake at 350˚ for 20 minutes in ungreased jelly roll pan (or 30 minutes in a 9×13 pan).

  2. Frosting: Mix all together well and pour over hot brownies.
