Mushroom Risotto

Ingredients

  • 6 cups vegetable broth, heated
  • 2 cups mushrooms, sliced
  • 1 1/2 cups Arborio rice
  • 1/2 cup white wine
  • 1/2 cup onion, chopped
  • salt & pepper to taste

Directions

  1. saute mushrooms, separate pan

  2. saute onion in oil or vegetable broth, in big pot

  3. add rice, let it get toasted

  4. add white wine, stir frequently until absorbed

  5. add broth 1/2 cup at a time until absorbed

  6. add mushrooms, salt & pepper
