Banana Nut Cake

Ingredients

  • 1 cup shortening
  • 1 cup sugar
  • 1 whole egg
  • 2 eggs separated
  • 1 cup bananas mashed
  • 2 cups flour sifted
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 3/4 cup pecans chopped
  • 1 teaspoon vanilla
  • ICING:
  • 1 3/4 cup sugar
  • 3/4 cup water
  • 1/8 teaspoon salt
  • 3 egg whites
  • 8 large marshmallows
  • 2 teaspoons lemon juice

Directions

  1. Cream shortening and sugar, add one whole egg and 2 yolks.

  2. Beat well, add bananas, add sifted dry ingredients, alternately with buttermilk.

  3. In a separate bowl, beat egg whites until stiff. Fold in egg whites.

  4. Stir in nuts and vanilla.

  5. Bake at 375 degrees for 1 hour 15 minutes.

  6. ICING: Bring to boil first three ingredients. Beat egg whites until stiff. Add 3 tablespoons of hot syrup into egg whites and marshmallows. Boil syrup until it spins a thread 4 to 6 inches long. Pour over egg whites, beat until marshmallows dissolve and icing is fluffy.
